UGH ADULTING IS A LOT!

Morning Readers…
I started yesterday on a short story and POOF! Gone! I don’t know if our IT guy at work has now blocked simple Microsoft Office programs or if my computer crashed. With my Adobe work still fulling intact, I’m betting my money on him being a prude and blocking most everything. What I have been doing is starting my writing in Word and pasting in my draft. Now, I’ll be using Google Docs. Why this is going to be short, I’m doing more adult tasks like setting up my portfolio to better my chances at getting a different job. Why didn’t I have one before? I was using iPage with all the backups bells and whistles when it CRASHED 2 years ago. I didn’t worry as I paid extra for their recovery services and that was a waste of money. This means I need to start over. The other problem I’m facing is the fact that I signed a confidentiality contract due to the clients the company work with. This means I need to get creative or take a 3 year hit. Creative it is.

I will try to get more writing in between building my portfolio back up and running plus I’m also working on my Google Ads certification. Fingers crossed I can get this done by tonight. I know this is a lot of mundane information for my readers but this is where I’m at and I’m trying to stay positive. This is also where my head cues my anxiety to join the party and sabotage my goals. Happy Friday everyone.

Oh My Doodles

I didn’t forget to doodle. I forgot to post doodles. Even though the kids had plans our life kind of revolved around those plans. In doing so, I lost my photography natural light for my painting. Breath in, breath out, it’s all ok.

Busy Bee

Let’s just say that I’m busier at home than at work today. I literally blew through all the work that came to my desk in no time. I’m surprised what use to take me hours to complete, now only takes me at most 30 minutes from start to finish. This would also include the spreadsheet that I fill out and digitally filing the .AI files in the appropriate folders.

I got a message from my daughter today that my son wasn’t feeling good. This only meant that he has caught the stomach bug that has been going around and my house is now ground zero and quarantined from guests. Mainly other kids though because I’m not a social butterfly and appreciate my quiet space and solitude with my family. This helps with any stress that could trigger an anxiety attack. I’m trailing off…I clocked out and headed straight for the store. I wanted to get a bag of taters to make my go to meal (tater hash), soup, juices, and an activity book for my son. My husband and always try to do a little something that will bring a little bit of comfort when they aren’t feeling like their usual hellion-selves.

I came home and remembered that I needed to pick up my son’s class packet that gives us his teacher’s name, supply list, and forms to fill out. Instead of freaking out, I started chopping ingredients and my husband volunteered as the ‘errand running’ tribute and left to deal with the school office mayhem. While dinner started cooking I took Clover outside for a short session of training. She did well until she heard kids screaming somewhere in the distance and she lost all focus. I brought her back in the house and continued to work with her a little longer. I started my computer up to do some writing and while this thing revved up I went through pictures of our cave outing and chose a few to upload. I stirred dinner, started writing this journal entry and reminded my daughter to work with Dublin and his clicker. As I wrote, I also created some distractions for Dublin and now I’m going to wrap this up, serve dinner, and write about our cave visit. IF my son feels well enough to give me the time needed to complete that. —-sigh

August 12th, 2017

Still Here

Yup, still here and still just as scattered brained and anxiety ridden as usual. So much has happened-even since I posted my last journal entry. It’s been so long I am not even sure what to highlight and write about. Let’s start with jobs. I still work both the bar and as a graphic designer (for a company). Let’s face it, the bar business is failing in the small town I work in. BUT it doesn’t help when the owner is not only not helping with anything with the business but shows up once a week to collect money but also bad mouthing his bar and the bartenders. Meat raffles that I put together are getting bigger and bigger and I actually need to enlist the help of the bar manager. Second job as a graphic designer for a small company. We are all feeling unappreciated and used since the wage freeze happened. Morale is down and people are getting snippy with one another. There is nothing I can do about that only to put inspirational or comical printed signs on our art room door. The girls seem to appreciate it. I see them worrying about job security, making ends meet, and being bullied into working harder-faster but met with no incentives. An email went out from our CSR Manager and one of the lines in the email, “As with everyone in world, what have you done for me lately, and what can you do for me now.” I only got this email because I have an actual computer based job. I’m so glad the girls that work hard everyday didn’t read that. I really believe it could’ve started a mutiny.

Training for the dogs is going great, slow but great but that is for a different post.

Cooking, thankfully my daughter has stepped in and helped with the Blue Apron meals that are delivered.

Writing courses have come to a temporary halt. I’m that effing busy! The kids start school soon, and there was summer school for my little guy (they passed him to the third grade), training for the dogs (again another post), I actually took time to have my hair trimmed, vet appointments, and I still have to school clothes/supply shop for all three kids.

Amidst all of what is going on, we have decided to take the kids to the caves. Something quite not local but not a trip that requires an overnight stay anywhere. Pictures and a post will be coming soon after (we leave tomorrow).

So, I wanted to say I’m glad everyone is still with me. I’m still here.

Compassionate Chicken Marbella

This was a complete accident. I thought I cancelled all the Blue Apron deliveries for this month. For some reason in my scattered brain fog I forgot this week. Well shit. Luckily I had the money in the bank to afford this delectable dinner.

My daughter knew how exhausted I’ve been and took charge. I arrived home from running to the store and dropping kids off to their requested destinations and smelled the fragrances of dinner. She was prepping the meal and hadn’t even started cooking! Garlic, oregano, and chopped prune scents were dancing in the air. What the hell is Chicken Marbella? According to our Blue Apron angel:

Chicken marbella is an Italian-American preparation of baked chicken served with a tangy-sweet sauce featuring prunes, capers, and more.

We’ve had prunes and I have had capers but never in a million years would I think they would make an amazing sauce. Watching  her dance around, chopping, drizzling oil, and sprinkling spices was mesmerizing. I offered to help but she wasn’t having it.

The aromas in my kitchen one would think they were being introduced by a professional chef but instead performed by my daughter. She informed me that she missed having blue apron and I had to agree.  The zucchini and potatoes were roasted perfectly and complimented the chicken nicely.

 From what I was allowed to observe she diced the potatoes and zucchini and placed them on a roasting pan, drizzled with olive oil, sprinkled with salt and pepper and placed them in the oven that was already cooking the chicken. She rehydrated the prunes she cooked then with the capers, garlic, oregano, daft, pepper in the olive oil. When it was all done we enjoyed perfect bites of goodness. There was English butter, cherry vinegar, and light brown sugar added somewhere but she was so quick I couldn’t tell you where they went but I can tell you she put them exactly where they belonged.

I learned two things:

  1. Never be afraid to try new things
  2. I’m raising my daughter to have compassion.

That nah was proof that she understood my exhausting schedule limits me with time constraints but she had the compassion I needed to get through the evening.

Quinoa and Quiche -A Cue from 2 Q’s

What the FU&$ is Quinoa??

I had no idea what I was going to cook for dinner simply because yet AGAIN I forgot to pull meat out from the freezer. Blue Apron to the rescue! The only recipe that I could cook that didn’t require meat from the freezer was Black Bean and Quinoa enchiladas. I looked at the recipe card and thought what in the hell is quinoa? Ya’ll know where I’m from and I grew up under my mamaw’s apron strings cooking up meat and taters with some kind of gravy. The ONLY remotely healthy thing we would try was the vegetables we pulled from the garden. That was the extent of adventuring outside the comfort zone of our standards outside of whatever daddy bagged for dinner when money was tight.

I wasn’t going to research what these little pebbles of mystery were until AFTER we ate but I did know that it was something that people were raving about in almost every fitness post I came across. I had to rinse them like a bean, boil them like a pasta, OK I can handle that. Finished prepping the dish, even got to cook up some tomatillo for the Verde sauce and was it delicious! My husband even jumped ALL in, no questions asked and loved it. So what I learned was that Quinoa is a hardy seed and a person knows it’s cooked when it has a curly looking tail. It’s LOADED with iron and vitamins. Who knew?

Questioning Quiche

Wednesday, I had errands to run and decided that I wasn’t going to be able to cook. THEN I get a weather warning  and looked in my rear view mirror and seen how black it was getting towards the direction where I lived and decided to turn around and be there with my children if anything was to happen. Nothing pulled out (again) and a slow panic started to rise in my throat. Like having an angel land on my porch my third Blue Apron order had arrived! So I choose the quickest meal with the least work needed and it was a ricotta cheese and arugula quiche. Now, I have never made a quiche and was skeptic at first. I mean come one, how filling could one of those be? Was it filling and yummy! We ALL scarfed it down like we haven’t eaten in days. And the best part was, it took me less than 30 minutes from start to table!

These two meals were my cue to step out of my comfort zone and try new things on my own without it being delivered to my house. I have so many ideas on how to make these recipes a different way or use the ingredients to substitute a meat in another dish.
